      <image:caption>For this recipe I chose to use what I had on hand, but adding to the versatility of tomatillos and salsa verde you can make this salsa in large batches - and then dehydrate to to have it on hand. From experience, I would suggest dehydrating excess rather than freezing it. I have had more luck rehydrating this salsa and keeping the flavors than I have defrosting it. But then again, if you don’t have a dehydrator, you can still freeze the excess and have this on hand to drop it in a crockpot with your chosen protein and it will come out tasty. You can even pickle tomatillos if that is more your taste.</image:caption>

The idea of surrendering this control to a high-tech pellet smoker left me skeptical and hesitant. Not to mention, I initially thought the pellet smoker was cheating a little.</image:caption>

      <image:caption>LESSON 3: Addiction to stress is real. I’m not referring to drama type of stress, but projects; things to do; a motivation or focus type of stress. And it can be good stress too, but much of it can be challenging. But addiction to stress is a real thing. LESSON 4: Your environment controls my mood. This is obviously not a new learned item, but more so a reminder for me in terms of how much my environment feeds my mood. When I leave “my spaces” I need to do a better job of bringing something small to make that space more comforting to me. This should help improve my mood in an environment that is frustrating to me. LESSON 5: Keep documenting. Continue documenting the meaningful moments. But also keep documenting the stuff that is not as pleasant. Your brain is or feels full most of the time, making focusing more challenging. Writing and documenting helps your focus, and it gives you a base to stand on in future conversations. This is particular important when you are documenting the stuff that is not as pleasant.</image:caption>

LESSON 8: Sometimes your supporters in life encourage you, but when you reach a level of strength that makes those supporters uncomfortable, that can lead to those supporters telling you that you changed or that they demonstrate that your few found strength makes them uncomfortable. But because it is not time one gets all that much of, that makes it more important (to me) that you get to enjoy your time off, and not be forced, guilted or pressured into doing things you don’t care for. I, like others, just happen to get more time off around the traditional holiday season, making this balance sometimes harder to find.</image:caption>

In the Podcast Fried the Burnout Podcast, something Cait Donovan said really resonated with me. She implied that if I were in a state of burnout, simply taking two weeks off from work (although helpful), would not be enough to fully recover from burnout. If I were in a state of stress, time off and the ability to get back to your old self would be a reality. In burnout, you lose the ability to get back to your old self simply with taking intentional time, alone. How Burnout is Viewed: I can’t lie. This is something I struggle with.</image:caption>

      <image:caption>Within the culinary world the term fusion cuisine is a term that refers to the combining of multiple cuisines and techniques to form a new cuisine. Some food writers and individuals in the culinary world argue that because the term Asian fusion “has become the catchall way to describe any restaurant using Asian ingredients that charges more than $20 per person” (Garbes, 2015), it is time to retire the phrase. While I (@knrottet) cannot comment specifically on whether it is time to retire the phrase (for now I’ll leave that to the culinary professionals), when I search Asian fusion near me in McAllen, Texas Dragon Warrior Noodle appears in my search. And good news- they didn’t charge us $20 per person.</image:caption>
